I've been vegan going on 5 years. I think the "transition foods" are really just that. I don't desire meat subsitutes like I did in the first year after going vegan.

Here in Europe, and particularly in a big cosmopolitan city like Vienna the big producers are getting smart. They know that we vegans are only 3% or so of the population and read the labels on all food, and that pretty much everyone knows that we should eat fewer animal products.

So they just stop using milk in bread products and don't advertise it, but we vegans note it. They will put the little green vegan leaf symbol on the package and maybe note "vegan" in small letter on the shelf tag with the price, but they make it about the product, and not about it being vegan. Smart marketing, I think.
