Israel is a Jewish state, but:

a) Not all Israelis are Jews (6.8 out of 9.3 million)

b) A minority 41% of the world population of Jews (16.1 million) live in Israel.

Therefore Israel ≠ Jew and Jew ≠ Israeli

Your "question" of "Isn't Israel the Jewish state" alludes to the anti-Semitic trope that saying something about Israel is anti-Semitic.

A state is NOT a religion. Criticizing Saudi Arabia's barbaric laws against homosexuality is not Islamophobic. Criticizing Israel's genocide of the Gazans is not anti-Semitic.
