Good for you, JLP. So it is you, by brother in law and Joe. Excellent.

I don't know where you live, but if you live in a big city or near a big city, being meat free is pretty easy - with the qualifiers that at first you need more time to shop and if you are transitioning from meat and dairy you'll probably go through a period of craving meat substitutes which are more expensive than veggies, semi-finally, if you are gluton and/or soy intolerant it will be tougher to get lots of protein as seitan and tofu are cheap and awesome sources of protein (and carbs). And finally, you'll need a B12 supplement because the bacteria may not be on the veggies you eat (they'll most likely be washed) but you should probably take one anyway, as most meat eaters are B12 deficient and don't know it.

If you live in a very rural area or a food desert, then it will also be tough to be totally plant based.

All that being said, you dont't need meat and dairy to eat a balanced diet. I won't claim vegetarian or vegan is a natural diet for humans, I don't think that is true. We're omnivores. But a plant based diet is certainly not low carb. Vegetables are mostly carbs. Eat some nuts and you'll get enough healthy fats. Probalbly more than enough.

It would be fantastic for climate change if more people had your attitude!!! not to mention what it would mean for all the animals.
